How much sugar goes into 25 liters of must?

    A batch of 25 liters of must is the size most home winemakers actually work with, and it is the number that decides how much sugar a correction takes. Everything else in the calculation is a rate: the gap between the sugar already in the fruit, measured in Brix, and the alcohol you want at the end fixes how many grams go into every liter, and the batch size simply multiplies it. Set the starting Brix to your own hydrometer reading before reading the answer, because a must at 16 Brix and a must at 20 Brix need very different corrections for the same target.

    The figures below start from a common case: a must at 18 Brix, a target of 12% ABV, and ordinary white sugar. That must carries about 10.6% potential alcohol on its own, so the correction has to supply the missing 1.4% across all 25 liters. Change any of the three fields and the answer moves with them. The tool also handles invert sugar, pure fructose and honey, which differ in how much fermentable sugar they carry per gram, so swapping one for another is not a gram-for-gram substitution.

    Chaptalization is the process of adding sugar to grape or fruit must before or during fermentation to increase the potential alcohol level. This calculator takes your must volume, current Brix reading and target ABV, then tells you exactly how many grams of sugar (white, invert, fructose or honey) to add.     Add a measured amount of sugar to raise the Brix to the target level. Dissolve sugar in a small portion of warm must, pour it back and mix thoroughly. Measure Brix again to confirm.

    How to calculate sugar addition - step by step

    1. Measure must volume - how many liters of must you have in the fermenter. Typical: carboy 5 L, demijohn 15-25 L, bucket 20-30 L.
    2. Measure current Brix - use a refractometer or hydrometer BEFORE adding sugar. Record the reading.
    3. Set target ABV - decide how much alcohol you want. Remember your yeast has a tolerance limit.
    4. Choose sugar type - white sugar is the default. Honey adds flavor but requires more grams. Fructose ferments faster.
    5. Enter yeast tolerance (optional) - if you know your yeast strain, enter its max ABV. The calculator will warn you if the target is too high.

    Example 1: Apple wine - must too weak - 20 L of apple juice at 14 Bx (potential 8.3% ABV). Target: 12% ABV. Missing: 3.7%.
    Result: 1,258 g white sugar (62.9 g/L). New Brix: 20.3 Bx. New SG: 1.084.
    Example 2: Grape wine - mild correction - 25 L of grape must at 20 Bx (potential 11.8% ABV). Target: 13% ABV. Missing: 1.2%.
    Result: 510 g white sugar (20.4 g/L). Brix rises from 20 to 22 Bx. A small correction typical for cooler climates.
    Example 3: Mead with honey instead of sugar - 15 L of diluted honey at 22 Bx. Target: 15% ABV. Missing: 2%.
    Result: 639 g honey (42.6 g/L). Honey needs more grams because only ~80% is fermentable sugar. Adds aroma, color and complexity.

    FAQ - Frequently asked questions

    How much sugar per liter to raise alcohol by 1%?
    It depends on sugar type: white sugar 17 g/L, invert sugar 17.5 g/L, fructose 15.5 g/L, honey 21.3 g/L. Fructose needs the fewest grams (monosaccharide, yeast absorbs it directly). Honey needs the most (only about 80% fermentable sugars).
    Can I add sugar after fermentation has started?
    Yes - this is called step feeding. You add sugar in portions every 3-5 days. This method is recommended for large doses (above 150 g/L), because it reduces osmotic stress on the yeast and leads to a cleaner fermentation.
    Is chaptalization legal?
    For homemade wine, chaptalization is legal in most countries. Commercial winemaking regulations vary by region. In the EU, chaptalization limits depend on the wine zone. In the US, federal regulations allow sugar addition for home winemakers producing up to 200 gallons per year for personal use.
    Honey or sugar - which is better for fruit wine?
    White sugar is flavor-neutral and does not change the fruit profile. Honey adds complexity (floral aroma, golden color) but costs more and ferments slower. Fructose is a middle ground: faster fermentation than sucrose, fewer grams needed, flavor-neutral. For apple and plum wines, white sugar or fructose is standard. For meads, use honey.
    How do I dissolve sugar in must?
    Draw off 1-2 liters of must, warm it to 40-50 C (do not boil), dissolve the sugar completely, cool to fermentation temperature, pour back into the fermenter and stir well. Do not dump dry sugar directly into the fermenter - it will settle on the bottom and dissolve unevenly.
    When should I NOT add sugar?
    If the must already reads 24 Bx or above, the potential ABV is already 14%+. Adding more sugar risks exceeding yeast tolerance, leaving unfermented sweetness (which may or may not be desired). For cider at 5-6% ABV, apple juice at 10-12 Bx is typically sufficient without any sugar addition.
