Your apple must reads 12 Brix - enough for about 7% ABV. But the recipe calls for 12%. The gap is sugar.
Chaptalization is the process of adding sugar to grape or fruit must before or during fermentation to increase the potential alcohol level. This calculator takes your must volume, current Brix reading and target ABV, then tells you exactly how many grams of sugar (white, invert, fructose or honey) to add. It also shows the before-and-after Brix comparison, checks yeast tolerance, and warns you about large sugar doses that could stress fermentation.
My must does not have enough sugar for the target ABV. The fruit did not ripen enough, or I diluted the juice, and the Brix reading is too low to reach the alcohol level I need.
Add a measured amount of sugar to raise the Brix to the target level. Dissolve sugar in a small portion of warm must, pour it back and mix thoroughly. Measure Brix again to confirm.
How to calculate sugar addition - step by step
- Measure must volume - how many liters of must you have in the fermenter. Typical: carboy 5 L, demijohn 15-25 L, bucket 20-30 L.
- Measure current Brix - use a refractometer or hydrometer BEFORE adding sugar. Record the reading.
- Set target ABV - decide how much alcohol you want. Remember your yeast has a tolerance limit.
- Choose sugar type - white sugar is the default. Honey adds flavor but requires more grams. Fructose ferments faster.
- Enter yeast tolerance (optional) - if you know your yeast strain, enter its max ABV. The calculator will warn you if the target is too high.
- Read results - total grams, grams per liter, before-and-after Brix, SG change, and any warnings about yeast tolerance or large doses.
Sugar type comparison - sucrose, invert, fructose, honey
| Property | White sugar | Invert sugar | Fructose | Honey |
|---|---|---|---|---|
| g/L per +1% ABV | 17 | 17.5 | 15.5 | 21.3 |
| Fermentable sugars | ~100% | ~100% | ~100% | ~80% |
| Flavor impact | neutral | minimal | slightly sweeter | pronounced (floral) |
| Fermentation speed | standard | faster | faster | slower |
Practical examples
Result: 1,258 g white sugar (62.9 g/L). New Brix: 20.3 Bx. New SG: 1.084.
Result: 510 g white sugar (20.4 g/L). Brix rises from 20 to 22 Bx. A small correction typical for cooler climates.
Result: 639 g honey (42.6 g/L). Honey needs more grams because only ~80% is fermentable sugar. Adds aroma, color and complexity.
Result: 255 g white sugar (25.5 g/L). Brix rises from 11 to 13.5 Bx. Modest addition for a stronger cider.
Result: 1,240 g fructose (62 g/L). Fructose needs fewer grams than sucrose (15.5 vs 17 g/L per 1% ABV) and starts fermenting faster.
