    What is the difference between first proof and second proof?
    First proof (bulk fermentation) is the main rise after mixing. The dough develops gluten structure and flavor. It should roughly double in volume. Second proof happens after shaping - it is shorter (about 55% of the first) and gives the shaped loaf its final volume before baking.
    How do I know if my dough has overproofed?
    Signs of overproofing: the dough collapses when touched, smells excessively sour, has a flat or concave top instead of domed, and the poke test indent does not spring back at all. In the oven, overproofed dough has poor oven spring and a dense, gummy crumb.
    Can I use the fridge to slow down proofing?
    Yes - cold retarding at 4-6C slows fermentation dramatically. A dough that takes 1.5 hours at 24C might take 10-16 hours in the fridge. The benefit: slower fermentation develops more complex flavors and acids, producing better-tasting bread with a more open crumb.
    How do I convert fresh yeast to instant yeast?
    Divide by 2.85. So 10 g fresh yeast = 3.5 g instant yeast. Instant yeast is more concentrated because it has less moisture. You can add instant yeast directly to the flour without dissolving it first.
    Why does sourdough take so much longer?
    Commercial yeast is a concentrated colony of Saccharomyces cerevisiae - billions of cells per gram, all producing CO2. Sourdough starter contains wild yeast plus lactobacillus bacteria, in much lower concentrations. The bacteria also compete with the yeast for sugars. Result: 3-6x slower rising, but with more complex flavor from the acids.
    At what temperature does yeast die?
