It depends on three variables: how much yeast or starter you used, the ambient temperature, and whether you are doing a first proof (bulk fermentation) or a second proof (after shaping). Change any one of them and the rising time shifts by hours. This calculator accounts for all three and gives you a range - not a single number - because dough is biology, not clockwork.
Recipes say "let the dough rise until doubled, about 1 hour." But your kitchen is 18C today, not 26C like the recipe author's. That one difference nearly doubles the proofing time. Cold retard in the fridge? Now you are looking at 8-16 hours instead of 1. Without a temperature correction, you either underproof (dense crumb, no oven spring) or overproof (collapsed loaf, sour taste).
This calculator uses a simplified Q10 rule: every 8C change doubles or halves fermentation speed. It covers four dough types (fresh yeast, instant yeast, sourdough, mixed), adjusts for baker's percentage of yeast/starter, corrects for temperature (4-40C range) and differentiates between first and second proof. How to use this calculator - step by step
- Dough type - choose between fresh yeast, instant yeast, sourdough or a sourdough+yeast mix. Each has a different base fermentation speed.
- Yeast/starter amount - enter baker's percentage (grams per 100 g flour). Fresh yeast: typically 1-3%. Instant: 0.3-1%. Sourdough starter: 15-40%.
- Temperature - the ambient temperature where the dough will proof. 4C = fridge, 24-28C = standard, 30C+ = accelerated.
- Proof stage - first proof (bulk fermentation, dough should double) or second proof (after shaping, about 55% of the first).
