    How to use this calculator - step by step

    1. Desired Dough Temperature (DDT) - set the target final dough temperature. Yeast dough: 24-27C. Sourdough: 25-28C. Pizza: 23-25C.
    2. Flour temperature - measure with a probe thermometer in the flour bag. If unavailable, assume room temperature.
    3. Kitchen temperature - the ambient air temperature where you mix and proof.
    4. Sourdough starter temperature - optional. Fill only if your recipe includes starter. The calculator switches to the 4-factor formula automatically.

    Six real-world scenarios

    Scenario 1 - Standard yeast bread, spring: DDT 26C, flour 21C, kitchen 22C, mixer 5 min (+2C). Water = 26 x 3 - 21 - 22 - 2 = 33C. Comfortable lukewarm water.

    Scenario 5 - Enriched brioche, warm kitchen: DDT 24C, flour 25C, kitchen 27C, mixer 12 min (+3C). Water = 24 x 3 - 25 - 27 - 3 = 17C. Cold water needed - butter in brioche adds extra heat during mixing.
    Scenario 6 - Extreme summer, sourdough: DDT 25C, flour 30C, kitchen 32C, starter 28C, mixer 8 min (+2C). Water = 25 x 4 - 30 - 32 - 28 - 2 = 8C. You need refrigerated water. Consider chilling the flour too.

    FAQ

    What is the DDT formula?
    3-factor (no starter): Water temp = DDT x 3 - flour temp - room temp - friction. 4-factor (with starter): Water temp = DDT x 4 - flour temp - room temp - starter temp - friction. The multiplier (3 or 4) equals the number of temperature components including the water itself.
    Why does water temperature matter so much?
    Yeast activity is exponentially sensitive to temperature. A dough at 28C ferments roughly twice as fast as one at 22C. If your water is 5C too warm, the dough may overproof before you shape it. Consistent water temperature = consistent timing = predictable bread.
    What if the calculator says I need ice water?
    Common in summer or with long mixer times. Add ice cubes to tap water and stir until the thermometer reads the target. As a rule of thumb: 30 g of ice per liter drops water temperature by about 1C. You can also chill the flour in the fridge for 1-2 hours beforehand.
    What if the result is above 45C?
    Water above 45C kills yeast. This happens in cold kitchens with long mixing. The fix: use autolyse - mix flour and warm water (without yeast) first, let it rest 20-30 minutes, then add yeast when the dough has cooled to 35C. Alternatively, lower your DDT target by 1-2 degrees.
    Do I need a thermometer?
    Yes. A digital probe thermometer (the kind used for meat) works perfectly. Your hand cannot distinguish 22C from 26C, but that difference shifts fermentation by 30-60 minutes. A thermometer costs less than a bag of good flour and lasts years.
    Why is the friction factor different for hand vs mixer?
    Mechanical kneading converts kinetic energy into heat through friction between the dough and the bowl. A stand mixer hook spins at 100-200 RPM for 10+ minutes - that is a lot of friction. Hand kneading is gentler and intermittent, so it adds less heat. Professional spiral mixers can add 4-6C in a single mix cycle.
