How to use this calculator - step by step
- Desired Dough Temperature (DDT) - set the target final dough temperature. Yeast dough: 24-27C. Sourdough: 25-28C. Pizza: 23-25C.
- Flour temperature - measure with a probe thermometer in the flour bag. If unavailable, assume room temperature.
- Kitchen temperature - the ambient air temperature where you mix and proof.
- Sourdough starter temperature - optional. Fill only if your recipe includes starter. The calculator switches to the 4-factor formula automatically.
