Replacing yeast with sourdough (or the other way around) without correcting those hidden ingredients results in dough that is too wet or too dry. This calculator handles both conversions and keeps the ratios intact.

    How to convert a recipe - step by step

    1. Choose direction - select whether you are converting from yeast to sourdough or from sourdough to yeast.
    2. Enter flour mass - the total flour in your original recipe (not counting flour inside the starter).
    3. Enter leavening agent - yeast mass (if converting to sourdough) or starter mass and hydration (if converting to yeast).
    4. Select flavor intensity - mild (15-20%), medium (20-30%) or intense (30-40%) starter relative to flour. Only applies to yeast-to-sourdough conversion.

    FAQ - Frequently asked questions

    Can I just replace yeast with sourdough 1:1?
    No. Sourdough starter is not just a leavening agent - it also contains flour and water. If you add 150 g of starter without correction, your dough gains 75 g extra flour and 75 g extra water. The calculator makes this correction automatically.
    Why does the calculator assume 100% starter hydration?
    Because that is the standard in home baking - equal parts flour and water by weight. If you maintain a stiffer starter (e.g. 60%), use the "sourdough to yeast" direction and enter your actual hydration in the dedicated field. The flour/water split adjusts accordingly.
    How is this different from a yeast type converter?
    A yeast type converter swaps between fresh, instant and active dry yeast (same fermentation method, different yeast formats). This calculator swaps the entire fermentation method - from commercial yeast to natural sourdough or vice versa - with full recipe adjustment.
    How much sourdough do I need for 500 g of flour?
    It depends on the flavor you want: 88 g for mild (17.5%), 125 g for medium (25%), 175 g for intense (35%). More starter means faster fermentation and more tang.
    Will the bread taste the same after conversion?
    No, and that is important to accept. Sourdough bread has tang, complex flavor and longer shelf life. Yeasted bread is milder, faster to make but goes stale sooner. The conversion changes the character of the bake.
    How does the calculator know how much water is in my recipe?
    It does not know exactly - it assumes a standard 65% hydration (325 g water per 500 g flour). If your recipe uses a different amount of water, adjust it manually by the same difference the calculator shows.
