A must at 32 Brix carries a specific amount of sugar that yeast must convert into alcohol and CO2. The higher the reading, the more work for the yeast - and the longer both primary and secondary fermentation take. Temperature shifts fermentation speed dramatically. A grape must at 22 Brix finishes primary fermentation in about 7 days at 20 C with wine yeast. Drop the temperature to 15 C and that number climbs to 8-9 days. Push it down to 12 C and you might wait 13+ days - if fermentation starts at all. How to estimate fermentation time - step by step
- Select your wine type - grape, apple, plum, cherry, mead or other. Each fruit has a different baseline fermentation speed.
- Enter the Brix reading - measure your must with a refractometer or hydrometer before pitching yeast. Higher Brix means more sugar and longer fermentation.
- Enter the temperature - the room or fermentor temperature in Celsius. This is the single biggest variable after yeast type.
- Choose your yeast - wine yeast (fastest, cleanest), bread yeast (slower, lower alcohol tolerance) or wild (unpredictable).
