What hydration is 650 g of water to 1 kg of flour?

    Hydration is water divided by flour, and nothing else. Put 650 grams of water against a kilo of flour and the percentage falls straight out. It is stated as a percentage of the flour rather than of the whole dough, which is why a figure above 100 percent is possible and not a mistake, though it is rare outside very wet rye doughs.

    What the number predicts is how the dough behaves in your hands. Below about 60 percent a dough is firm, holds its shape and is easy to shape into rolls or a sandwich loaf. Between 65 and 75 percent it turns slack and sticky, needs folds rather than kneading, and starts producing the open irregular crumb people are usually chasing. Above 80 percent it stops behaving like dough at all until it has been developed properly, and a beginner will usually add flour and undo the whole point of it.

    Flour type matters as much as the number. Strong bread flour absorbs noticeably more water than all-purpose, and whole grain more again, so 650 grams against a kilo can feel workable with one flour and soupy with another. If you use a sourdough starter or a poolish, the water inside it counts too, and the calculator has a field for exactly that, because leaving it out is the commonest way of quoting a hydration that is several points lower than the dough you actually made.

    Hydration percentage is the single number that defines a bread's texture. At 55% you get bagels - dense, chewy, easy to shape. At 80% you get ciabatta - open crumb, wet and sticky, nearly impossible for beginners. The calculator splits your recipe into total flour and total water (including the flour and water hidden inside sourdough or poolish) and returns the exact hydration level with a classification band.

    Flour absorption guide

    Different flours absorb water differently. The same recipe may need hydration adjustments when switching flour types:

    What is baker percentage?
    Baker percentage expresses every ingredient as a percentage of the total flour weight. Flour is always 100%. If you use 500 g flour and 350 g water, your hydration is 350/500 = 70%. This system makes it easy to scale recipes up or down without recalculating ratios.
    Why does sourdough hydration matter?
    A 100% hydration starter (equal flour and water) is different from a 50% stiff starter (lievito madre). A 200 g starter at 100% hydration adds 100 g flour + 100 g water. The same 200 g at 50% adds 133 g flour + 67 g water. This changes your final dough hydration by several percentage points.
    Should I count oil as water?
    Technically no - oil is 0% water. But it does contribute to dough softness and extensibility. Professional bakers exclude oil from hydration calculations. For home baking, the practical difference is small. This calculator includes "other liquids" as a simplified water equivalent for convenience.
    How do I adjust hydration for whole wheat flour?
    Whole wheat bran absorbs more water than white flour. Add 5-10% more water than the same recipe with white flour. A 65% white bread recipe becomes 70-75% with whole wheat. Also let the dough rest 20-30 minutes after mixing (autolyse) - bran takes time to hydrate fully.
    What is the ideal hydration for beginners?
    Start at 65-68%. The dough is manageable, shapes easily and still produces good bread. Once comfortable, increase by 2-3% at a time. Above 72%, use stretch-and-fold instead of kneading. Above 78%, you need experience and a bench scraper.
    Does ambient humidity affect hydration?
    Indirectly. On humid days, flour absorbs moisture from the air and feels wetter. On dry days, the opposite. The difference is small (1-2%), but experienced bakers hold back 5-10% of the water and add it gradually based on how the dough feels.
