The first step was understanding how much the room temperature actually matters.
Step 1 - measure everything that touches the dough
A probe thermometer costs less than a bag of bread flour. The three numbers that matter: flour temperature, room temperature, and (if you use sourdough starter) starter temperature. These three inputs plus a friction factor for your mixer go into the DDT formula - Desired Dough Temperature.
The Dough Water Temperature Calculator runs the math. Set a DDT of 26C, plug in your flour at 22C, kitchen at 24C, stand mixer for 8 minutes (+2C friction) and the result is 30C water. Step 2 - predict the proof, do not watch the clock
Once the dough temperature is locked, proofing time becomes predictable. But what if you cannot control the room where the dough sits? What if it is 28C upstairs and 20C in the basement?
The Dough Proofing Calculator handles that. It uses a simplified Q10 rule: every 8C change doubles or halves fermentation speed. At 24C with 2% fresh yeast, first proof takes roughly 1 hour 20 minutes to 2 hours. Move the dough to the basement at 16C and the estimate jumps to 2.5-3.5 hours. Put it in the fridge at 4C for an overnight cold retard and you are looking at 10-16 hours.
These are not wild guesses. They are estimates based on the same exponential relationship that professional bakeries use to schedule production. The calculator also warns you when the window between "ready" and "overproofed" is dangerously short - which happens above 30C with plenty of yeast.
