Five grains, three meal types, one portion rule

Dry pasta roughly doubles in weight when cooked. Rice nearly triples. These multipliers catch people off guard - 80 g of dry spaghetti becomes 200 g on the plate, which is a generous main-course serving. But 80 g as a side dish is too much. This calculator sorts it out: pick the product, the number of people, whether it is a main or a side, and get the exact dry weight, cooked weight, cooking time and calorie count.

How to use this calculator - step by step

    1. Product - choose pasta, white rice, brown rice, boil-in-bag rice, or rice noodles. Each has different base portions and cooking multipliers.
    2. Number of people - enter the head count. Range: 1-30.
    3. Meal type - main course (largest portion), side dish (medium), or soup (smallest). This changes the base grams per person.
    4. Appetite - small (-25%, kids or dieting), standard (baseline), or large (+25%, active or bulking).
    5. Read the results - dry weight total and per person, cooked weight, cooking time, calories, and cooking instructions specific to the product.

Everything you need to know about portions

The standard portion sizes in this calculator come from Italian and USDA guidelines. An Italian primo piatto (first course of pasta) is 80-100 g dry. The USDA considers a serving of grain 56 g dry, but that is a nutritional reference, not a dinner plate. Most adults eating pasta as a main course consume 75-100 g dry. For rice, the range is slightly lower: 60-75 g dry because rice absorbs more water and feels more filling per gram.

The appetite modifier works as a simple multiplier: small = 0.75x, standard = 1.0x, large = 1.25x. For kids under 10, use "small". For athletes or physical workers, use "large". The difference between small and large appetite for 4 people is 80 g of dry pasta - roughly one extra serving.

    Dry-to-cooked weight conversion table

How much does 100 g of dry product weigh after cooking? The multiplier depends on how much water the product absorbs.

    Product 100 g dry = Multiplier Cooking time Calories / 100 g dry
    Pasta 250 g cooked x2.5 8-12 min 350 kcal
    White rice 280 g cooked x2.8 18-20 min 360 kcal
    Brown rice 250 g cooked x2.5 35-40 min 370 kcal
    Boil-in-bag rice 250 g cooked x2.5 15-20 min 360 kcal
    Rice noodles 200 g cooked x2.0 5-8 min 360 kcal

    Portion sizes by meal type

Product Main course Side dish Soup
    Pasta 80 g 50 g 30 g
    White / Brown rice 70 g 50 g 30 g
    Boil-in-bag rice 50 g (1 bag/2 ppl) 50 g 50 g
    Rice noodles 70 g 50 g 25 g

    Did you know?

Al dente saves calories. Pasta cooked al dente has a lower glycemic index (GI 45) than soft-cooked pasta (GI 55). The firmer starch structure slows digestion, keeping blood sugar more stable and leaving you feeling full longer.

Rinsing rice removes up to 30% of arsenic. White rice absorbs arsenic from soil. Rinsing 3 times in cold water before cooking reduces inorganic arsenic by 20-30%. Brown rice has more because the bran layer concentrates it.

Italians use 10 g of salt per liter of pasta water. That sounds like a lot, but most of it stays in the water. The pasta absorbs only about 1-2% of the salt. Under-salted water produces flat-tasting pasta that no amount of sauce can fix.

Brown rice has 3x more fiber than white. Per 100 g dry: brown rice has 3.5 g fiber, white rice has 1.3 g. But brown rice takes twice as long to cook (35-40 min vs 18-20 min) and has a shorter shelf life.

Rice noodles are gluten-free. Made from rice flour and water only, they are naturally safe for celiac disease. Regular wheat pasta contains 10-14% gluten protein. If substituting, use x2.0 multiplier instead of x2.5 for cooked weight.

    Who is this calculator for?

Home cooks - stop guessing how much spaghetti to boil for 6 people. Get the exact dry weight and avoid the "too much" or "not enough" problem.

Meal preppers - calculate exact portions for 5-7 days of lunches. Use the calorie output to fit your daily macro targets.

Parents - switch to "small appetite" for kids under 10. The 25% reduction matches pediatric portion guidelines.

Party planners - scale up to 30 people. The calculator handles boil-in-bag rice rounding (bags come in 100 g units) automatically.

    Practical examples

Example 1: Spaghetti bolognese, 4 adults, main course, standard appetite
    4 x 80 g = 320 g dry pasta = 800 g cooked. Calories: 1,120 kcal total (280 per person)
Example 2: White rice as side dish, 6 people, standard
    6 x 50 g = 300 g dry rice = 840 g cooked. Water: 450-600 ml. Cook 18-20 min.
Example 3: Brown rice main course, 2 people, large appetite
    2 x 88 g = 176 g dry = 440 g cooked. Cooking time: 35-40 min. Calories: 326 kcal/person.
Example 4: Boil-in-bag rice, 5 people, main course, standard
    5 x 50 g = 250 g needed. Rounded: 3 bags (300 g) = 750 g cooked.
Example 5: Rice noodles for pad thai, 3 people, main, standard
    3 x 70 g = 210 g dry = 420 g soaked. Soak in boiling water 5-8 min, then stir-fry.

    FAQ - Frequently asked questions

How much dry pasta equals one serving?
For a main course, one serving is 75-100 g dry pasta (this calculator uses 80 g as the baseline). For a side dish, 50 g. For soup, 25-30 g. These are per-person amounts. A 500 g box of spaghetti feeds 6 people as a main or 10 as a side.
Why does cooked pasta weigh more than double the dry weight?
Pasta absorbs water during cooking. Durum wheat semolina absorbs roughly 1.5x its weight in water. So 100 g dry + 150 g water = 250 g cooked (the x2.5 multiplier). Overcooked pasta absorbs even more water and can reach x3.0, but the texture suffers. Al dente pasta is closer to x2.3.
What is the rice-to-water ratio for stovetop cooking?
White rice: 1 : 1.5 to 1 : 2 (1 cup rice to 1.5-2 cups water). Brown rice: 1 : 2 to 1 : 2.5. The lower end gives firmer grains, the higher end gives softer rice. Start with 1:1.5 for white rice and adjust next time. Basmati rice prefers the lower ratio; sushi rice prefers the higher.
Is brown rice healthier than white rice?
Brown rice has more fiber (3.5 g vs 1.3 g per 100 g), more B vitamins, and more minerals. But it also has more arsenic (concentrated in the bran layer) and more phytic acid (reduces mineral absorption). For most people, alternating between brown and white is the practical approach. If you eat rice daily, rinse it well and alternate types.
    Do calories change after cooking?
The total calories stay the same - cooking does not add or remove energy. But calories per gram drop because the food absorbs water. 100 g dry pasta = 350 kcal. After cooking it weighs 250 g but still has 350 kcal, so per gram it is now 140 kcal/100 g cooked. The calculator shows calories based on dry weight to avoid confusion.
How do I measure pasta without a scale?
For spaghetti: a bundle that fits in the circle made by your thumb and index finger is roughly 80-100 g (one serving). For short pasta (penne, fusilli): 3/4 cup dry is about 80 g. For rice: 1/3 cup dry is about 65-70 g. A kitchen scale (under $10) is the most reliable method.
