    Why does my soft-boiled egg sometimes come out hard?
    Three common reasons: 1) The egg was larger than you assumed (L vs M = 1 extra minute). 2) You left it in the hot water after turning off the heat - carryover cooking continues. 3) You did not ice-bath it immediately. Always transfer soft and jammy eggs to ice water the moment the timer goes off.
    Is the boiling water or cold water method better?
    Boiling water start is more reliable because the clock starts from a known temperature (212 F / 100 C). Cold water start depends on your stove power, pot size and water volume - hard to repeat exactly. The only advantage of cold water is fewer cracked shells, since there is no thermal shock. If cracking is a problem, prick a tiny hole in the wide end with a thumbtack before lowering the egg into boiling water.
    What causes the grey-green ring around the yolk?
    Iron in the yolk reacts with hydrogen sulfide from the white at high temperatures. It is harmless but looks unappealing and gives a slight sulfur taste.
