"Just leave it on the counter for a few hours." That sentence has been passed down through generations of home cooks, and it is wrong. Not slightly wrong. Dangerously wrong. The USDA has been saying it for decades: the outer layer of meat left at room temperature enters the bacterial danger zone - 40 to 140 F - within 20 minutes. Salmonella doubles every 20 minutes in that range. By the time the center of a 2 kg chicken finally thaws on a kitchen counter, the surface has been a petri dish for hours.
That is myth number one. There are two more.
Myth two: a cake made without oil or cream must be low in calories. Myth three: bread dough should always be the same consistency. Both collapse under actual numbers. And those numbers are what the three calculators in this article produce.
Myth 1 - "Counter thawing is fine if you cook it right away"
No. The USDA, the FSA and every food safety authority on the planet says the same thing: only three methods are safe.

The surprise is how long refrigerator thawing actually takes. Most people guess 4-6 hours for a whole chicken. The real number for a 2 kg bird: 16 hours and 15 minutes. That means taking it out of the freezer the evening before, not the morning of.

Scaling is sub-linear. A 2 kg piece does not take exactly twice as long as 1 kg - the calculator uses an exponent of 0.85 for fridge and cold water methods, which matches USDA experimental data.
Can you refreeze thawed meat? Only if you used the fridge. Meat thawed in cold water or the microwave must be cooked first.
Myth 2 - "This cake has no cream, so it can't be that many calories"
A basic sponge cake. Four ingredients: 300 g rye flour, 200 g sugar, 200 g butter, 3 eggs (180 g). No frosting, no filling, no cream. Sounds modest.
Total: 3,524 kcal. Twelve slices. That is 294 kcal per slice - roughly the same as a Snickers bar.
Where do the calories come from? Butter. At 735 kcal per 100 g, butter is the most calorie-dense solid ingredient in baking. Those 200 g of butter alone contribute 1,470 kcal - nearly half the entire cake. Sugar adds another 800. Flour adds 975 (rye flour is 325 kcal/100 g). The three eggs are almost a rounding error at 279 kcal.
The macro split tells the rest of the story: 48% fat, 46% carbs, 6% protein. A cake without cream is still a fat-and-sugar delivery system.

Myth 3 - "Bread dough should feel like X"
Beginners read one recipe, learn one dough consistency, and assume that is how all bread should feel. It is not. The variable that defines bread texture is hydration - the ratio of water to flour, expressed as a percentage.
At 55% hydration you get bagels: stiff, dense, chewy. At 80% you get ciabatta: wet, sticky, nearly impossible to handle without a bench scraper. Both are bread. Both are correct. They just live at opposite ends of the hydration scale.

The hidden variable most beginners miss: sourdough starter contains both flour and water. A 200 g starter at 100% hydration adds 100 g flour and 100 g water to your recipe. The calculator splits it automatically.
Flour type matters too. Whole wheat absorbs 5-10% more water than white because the bran acts like tiny sponges. Switch from white bread flour to whole wheat in a 65% recipe and your dough will feel bone-dry. Bump it to 72-75% and it works again.
The sweet spot for beginners: 65-68%. Manageable, shapes easily, still produces good bread. Increase by 2-3% once comfortable. Above 72%, switch from kneading to stretch-and-fold. Above 78%, prepare for a sticky mess that somehow turns into incredible bread.

The pattern across all three: people trust intuition over measurement. Counter thawing feels safe because the meat gets warm. A plain cake feels light because there is no frosting. Bread dough feels right because it is the only one they have made. Calculators do not have feelings. They have formulas.
